8-course menu at Dolores – Former fine-dining chef brings a taste of San Francisco's Mission District to Carlsberg Byen, and Berlingske calls it ‘a flawless execution’
Politiken put Dolores in their top ten highlights of 2024 and Berlingske’s reviewer deemed his visit ‘a perfect evening’. Here, head chef Oliver Lerche, who previously co-led the kitchen at Dragsholm Slot, develops season-driven menus inspired by the melting pot of cultures in San Francisco’s historic Mission District. At Dolores, high-quality cuisine meets low-key comfort, and impeccable ingredients are at the crux of it all. With everything from saffron arancini and mushroom wontons to crispy Iberico pork croquettes and fried cauliflower in XO sauce, their worldly menu is without borders. WHAT YOU GET
Enjoy an 8-course ‘Around the World’ menu at Dolores. The menu is chef’s choice, so dishes rotate regularly and reflect the best produce of the season. Bite into saffron arancini filled with melty mozzarella. Taste crispy mushroom wontons with a sesame and soy dipping sauce. Savor a richly aromatic mushroom broth with smoked cream. Next, feast on crispy fried cauliflower topped with XO sauce and katsuobushi. Revel in ‘papas rellenas’, Spanish-inspired croquettes filled with white wine-braised Iberico pork. Eat cheesy chicken parmigiana with basil and pistachio pesto, then have charred hearts of romaine with creamy elderflower dressing. For dessert, delight in blood orange sorbet and white chocolate cremeaux with saffron, candied pistachios, and a drizzle of olive oil.

Dolores is a dream that was nearly seven years in the making. First visualized by Merete Holst and Dorte Juhl Østergaard of the acclaimed restaurant group LOCA, it was finally brought to life in May of last year in collaboration with chef Oliver Lerche. Lerche cooked in some of France’s top fine-dining restaurants for several years before returning to Denmark to co-lead the kitchen at Dragsholm Slot. Now, he is creating an everyday luxury experience in the heart of Carlsberg Byen at Dolores. From curating an extensive wine list and cooking everything from scratch to meticulously accounting for their CO2 emissions, their diverse team works diligently to look after every last detail.
