5-course menu at FAR – A tiny, 22-seat restaurant serving flavor-packed vegetarian fare on Vesterbrogade has been declared ‘the green kitchen of the future’

Politiken called FAR ‘the green kitchen of the future’ not long after it opened last summer, and for such a small restaurant, the ambitions are impressively big. Here, organic seasonal ingredients take center stage and the vegetable-forward menu has unexpected twists that win over even the most devout meat-eaters. The team brings experience from Pauli and No. 30, and fostering connections over mindfully curated food and natural wine is their driving force. Adorned with eclectic decor, the atmosphere is a fun hybrid between a dining room, wine cellar, and living room. With only 22 seats, this is a place where you feel seen and well taken care of – and most of all, well fed!

WHAT YOU GET

Enjoy a 5-course menu at FAR. The menu is chef’s choice, so dishes rotate regularly and reflect the best produce of the season. Start with a sampler plate of pickled and fermented vegetables served with smoky chili crunch for dipping. Then, taste tender beets with herb oil, confit garlic, sunflower seed praline, and a garnish of pickled ramson flowers. Try green kale tossed in dill vinaigrette, accompanied by chioggia beets, pumpkin purée, toasted pumpkin seeds, and pickled blueberries. Eat sautéed leeks smothered in blue cheese cream, garnished with chopped walnuts and orange oil. Devour umami-packed pommes anna topped with caramelized onions, confit enoki mushrooms, toasted buckwheat, and miso emulsion.

They discovered the tiny, tucked away space by spotting a handwritten note on the door that said ‘For Rent’. The original idea was to open a wine bar, but guests were so enamored with their inventive, hyper-seasonal snacks that the owners decided it should become an intimate restaurant instead. It quickly garnered rave reviews, but with an even more ambitious concept in mind, they decided to close what was known as 3100 and open FAR in its place. Named after their late fathers, FAR is about where we come from, where we grow, and where our food comes from and grows. The vibe is laid-back, the wine is natural, the ingredients are organic, and they genuinely mean it when they say, ‘Come as you are.’
