A centuries-old inn with wooden beams and a warm fireplace, where deer wander by in the woods, the scent of ocean is carried on the cool winter breeze, and every so often, a horse-drawn carriage trots by. Does a more idyllic place even exist? And then, a menu that more than does the stunning surroundings justice. Berlingske awarded the restaurant five and a half stars, deeming it an ‘excursion destination’ serving ‘little masterpieces’ that might be the best in Denmark, and Søren Frank subsequently counted it among his top ten meals of 2024. With head chef Andrew Clatworthy at the helm, Peter Liep’s Hus brings smørrebrød into the modern day with tastes of Dyrehaven and Øresund that evolve with each passing season.
WHAT YOU GET
Enjoy a 4-course smørrebrød menu and dessert at Peter Liep’s Hus. The menu is selected by the chef, served family-style, and rotates regularly to reflect the best produce of the season. Begin with curried herring topped with a soft-boiled egg, caperberries, onion, dill, and Vadouvan oil. Next, eat classic fish ‘frikadeller’ accompanied by homemade remoulade and fresh lemon. Taste a signature take on creamy chicken salad with confit pheasant, poached chicken, dried forest mushrooms, and fermented kohlrabi, served atop toasted sourdough. Savor rich pâté adorned with housemade pickles, fried wild mushrooms, and crispy bacon. For dessert, delight in a salted caramel and chocolate tart topped with sweet plum sorbet.

Just beyond the red gates in Dyrehaven lies a restaurant that has lived through many seasons but has entered perhaps its most culinarily spectacular one yet. Originally founded by a local forest ranger named Peter Liep at the end of the 19th century, this ‘traktørsted’ still pays tribute to its historic roots even as it has been given a fresh look under new ownership in 2023. Here, local ingredients elevate the menu while rooting it in the surrounding land. Herbs are foraged in the forest, deer are hunted by local rangers, and rosehip flowers are gathered from the nearby beach. The terroir can be tasted not only in the food but also in their impressive selection of housemade schnapps.
