The red thread in the food menu is no-nonsense comfort food that satisfies every craving and the tap list is flush with unbeatable Danish craft beer. Sit next to the tanks as you sip on ultra-fresh brews and peek in the open kitchen where some serious made-from-scratch magic happens. At BRUS, they grind their own meat, bake their own buns, cut the fries by hand, and brew beer around the clock. Take your pick of 32 taps, eat everything from smash burgers and pork bao buns to handmade mushroom ravioli, and enjoy the lively neighborhood vibe. Ever since the To Øl team opened the doors to BRUS in 2015, people have visited again and again because something new is always brewing.

WHAT YOU GET

Pick whatever you like at the BRUS bar and eatery. Dig into shareable small plates like sweet-and-sour chicken wings, fried padron peppers with parmesan cheese, and signature fermented potato fries. Bite into bao buns with slow-cooked pork belly or crispy cauliflower fritters, served with mirin sauce and daikon salad. Feast on a double smashed beef burger with cheddar cheese, lettuce, pickles, and secret sauce. Savor a pastrami reuben sandwich with fermented greens and Vesterhavsost. Eat an elevated all-American classic like fried chicken and waffles with pickled apple, maple syrup, and sriracha. Don’t forget a freshly fried donut or ‘risalamande’ for dessert.

Choose from 32 different Danish craft beers and cocktails on tap. Many beers are brewed in-house by the To Øl team in the tanks you’re seated next to. Sip a Blunderbuzz IPA, København Blank Wheat Beer, or Common Ground Helles Lager. Taste a There Gose the Seawater Pipe Sour with notes of lemon and thyme or an Irish Dry-style Ninja Vision Stout. Have a Hazy Ways NEIPA, Simples Session IPA, or seasonal 45 Days of X-mas Vienna Lager. If you want to add an extra dimension to your beer-drinking game, try the unique cask varieties brewed in-house as well. Crush a Sippery Slope cocktail with gin, grapefruit, and Szechuan pepper, a classic Whiskey Sour with bourbon and lemon, and much more.

BRUS opened as a local brewery and bar nearly a decade ago, and many would credit them with making tank-to-tap the new farm-to-table movement in Denmark. Not only that, but they also opened an in-house eatery that has pushed the boundaries of typical bar food since the beginning. Here, contemporary craftsmanship brews in the tanks, flows from the taps, and fills the plates. With a polished industrial interior and an atmosphere that dances between laid-back and buzzy, this place brings life to an already beloved area of the city. And, while the place is often packed with both craft beer enthusiasts and hungry diners, as their team likes to say, ‘There’s always room for one more!’
