It’s one of those institutions that has taken on a life of its own, and at the age of 122, Sans Souci is as spirited as ever. When its future became uncertain in 2022, new owners rallied to re-open and revitalize the timeless restaurant. Soon after, chef Christoffer Brink (formerly of Geranium and Restaurant Frank) took the helm in the kitchen and raised the bar even higher. Using seasonal Danish ingredients, Brink creates second-to-none smørrebrød with a refined French flare. Both unpretentious and exquisite, Sans Souci dances in the delightful in-between. This is a place where you feel at home, but the smørrebrød and service are of a caliber you can’t get by staying in.

WHAT YOU GET

Pick any two smørrebrød at Sans Souci. The smørrebrød selection rotates regularly and reflects the best produce of the season. Taste beef tartare tossed with fresh summer tomatoes, mustard, and tarragon. Feast on fried plaice topped with hand-peeled shrimps and lemon mayonnaise. Choose creamy chicken salad à la Waldorf studded with crisp celery, apple, and chopped walnuts. Have fried herring with leek compote, thyme, capers, and beurre blanc. Revel in roast beef garnished with horseradish, citrusy remoulade, fried onions, and fresh cress. Get potatoes topped with grilled and pickled onions, herbed mayonnaise, and crunchy potato chips. Savor smoked salmon on baked in-house brioche, curry pickled herring with egg salad, and more.

Just as a wine embodies the terroir of its region, Sans Souci exudes a distinctly Frederiksberg-esque character, paying tasteful homage to the neighborhood’s earlier days as a French-influenced hangout for bohemians. With an interior akin to a Parisian brasserie and original artwork by local painters on the walls, the decor is reminiscent of decades past yet retains a modern feel. Using Danish ingredients of the highest quality, chef Christoffer Brink brings new life to classic smørrebrød in a similar fashion. In addition to a wide selection of beers and snaps, Sans Souci has over 2500 bottles of wine waiting to be opened and enjoyed ‘without worries’, exactly as the name implies.
