Back in the day, the team at Gaarden & Gaden used to bake bread in their compact kitchen during off-hours. Then in 2021, owner Thomas Spelling cycled past a nearby location, saw a ‘For Sale’ sign, and decided their sourdough deserved a dedicated space. Rondo was born, and it’s since grown into one of the city’s best bakeries – a lofty title in a carb-obsessed city like Copenhagen, but media outlets around the world heartily concur. Head baker, Robert Agren, embraces the dynamic nature of baking; just as a ‘rondo’ is a repeating piece of music that has nuances each time it’s played, Rondo’s recipes are consistently top-notch but ever-evolving.
